PREPARATION TIME: 15 minutes, plus 30 minutes to chill
3 pints fresh raspberries, a few reserved for topping
3 tbsp sugar, divided (2 tbsp for the berries, 1 tbsp for the cream)
1 tbsp triple sec
1 ½ cups heavy whipping cream
1 tsp almond extract
4 nutty cookies, such as amaretti or macadamia nut cookies
Note: Raspberry puree may be prepared in advance. Whip cream and assemble Fool just before serving.
