Raspberry Fool

The ultimate no-bake dessert, Fool has been beloved in England since people first began writing their recipes down. Whip it up for a last-minute, stress-free sweet!

How to prepare a delicious Raspberry Fool?

RECIPE:

DEGREE OF DIFFICULTY:  Easy

PREPARATION TIME: 15 minutes, plus 30 minutes to chill

SERVINGS: 4

INGREDIENTS:

3 pints fresh raspberries, a few reserved for topping

3 tbsp sugar, divided  (2 tbsp for the berries, 1 tbsp for the cream)

1 tbsp triple sec

1 ½  cups heavy whipping cream

1 tsp almond extract

4 nutty cookies, such as amaretti or macadamia nut cookies

Directions:

  1. Place the raspberries,  2 tbsp sugar and optional 1 tbsp triple sec into a bowl and mash to a chunky puree with a fork.
  2. Chill in the refrigerator for 30 minutes while you get on with the rest of it!
  3. Whip the cream, 1 tbsp sugar and almond essence to stiff peaks.
  4. You should probably taste the whipped cream at this point. Okay, save some for the Fool!
  5. In pretty glass serving dishes or parfait cups, alternate spoonfuls of cream and raspberry puree.  Top with fresh raspberries and crumbled cookies.
  6. Devour!

Note: Raspberry puree may be prepared in advance. Whip cream and assemble Fool just before serving.
